Step-by-step instructions to prepare ragda chaat

Ingredients:-

for pressure cooking
  • White peas: 1 cup (soaked overnight)
  • Potato: 2 medium
  • Water: 2 cups
  • Salt to taste
  • Turmeric::½ tsp
for making green chutney
  • Coriander leaves: ½ cup (for green chutney)
  • Pudina leaves: ¼ cup
  • Ginger: 1 (medium-sized)
  • Garlic: 6-7 cloves
  • Green Chili: 3
  • Roasted chana dal: 1 tbsp
  • Salt
  • Cumin: ½ tsp
  • Lemon juice: 1 tbsp
  • Ice cubes: 3
For preparing ragda
  • Oil: 3 tbsp
  • Cumin seeds: ½ tsp
  • Ginger minced: 2 tsp
  • Garlic minced: 2 tsp
  • Green Chili: 1
  • Onion: 1 medium
  • Tomato: 2 medium
  • Turmeric powder: ½ tsp
  • Kashmiri chili powder: 1 tsp
  • Coriander powder: ½ tsp
  • Garam masala: ½ tsp
  • Water: ½ cup
  • Water: ¼ cup
For garnishing
  • Curd
  • Tamarind Chutney
  • Green Chutney
  • Onion (chopped)
  • Tomato (chopped)
  • Green chili (chopped)
  • Chaat masala
  • Kashmiri chili powder
  • Garam masala
  • Salt
  • Sev
  • Coriander Leaves

Instructions:-

for pressure cooking

Step 1. Soak 1 cup of white peas overnight then transfer to pressure cooker. Next, add 2 medium potatoes, 2 cups of water, salt, ½ teaspoon turmeric powder. Pressure cook till 6 whistles.

for making green chutney

Step 2. To a grinding jar, Add ½ cup coriander leaves, ¼ cup pudina leaves, 1 medium-sized ginger, 6-7 cloves garlic, 3 green chilies, 1 tablespoon roasted chana dal, salt, ½ teaspoon cumin, 1 tablespoon lemon juice, 3 ice cubes, Blend smooth and green chutney is ready.

For Preparing ragda
  • Step 3. Open the pressure cooker after releasing all pressure. All are cooked well. Mash the potatoes and peas slightly
  • Step 4. Heat a frying pan on a medium flame and add 3 tablespoon oil, ½ teaspoon cumin seeds, 2 teaspoons minced ginger, 2 teaspoon garlic minced, and 1 green chili. Saute for a few seconds then add 1 onion chopped and stir well until the onion turns golden. Next, add 2 medium tomatoes chopped. Cover and cook until it becomes soft.
  • Step 5. After a few minutes, Open the cover and add ½ teaspoon turmeric powder, 1 teaspoon Kashmiri chili powder, ½ teaspoon coriander powder, and ½ teaspoon garam masala. Cook for 1 minute then add ½ cup of water, cover and cook until soft. 
  • Step 6. A few minutes later, open the cover and add cooked peas and potatoes to it. Next, add ¼ cup of water then simmer for 2 minutes. Ragda chaat is ready.
For Garnishing

Step 7. Transfer ragda to a serving plate and garnish with little curd, tamarind chutney, green chutney, chopped onion, chopped tomato, green chili, chaat masala, Kashmiri chili powder, garam masala, salt to taste, coriander leaves, and sprinkle a little sev.
