Ingredients:-

Stuffing:

  • Onion - 1 medium
  • Coriander leaves - 2 tbsp
  • Lemon Juice - 2 tbsp
  • Salt as required

Batter

  • Mirchi - 6
  • Besan /gram  flour - 2 cups
  • Rice flour - 3 tbsp
  • Corn flour - 2 tbsp
  • Chili powder - 1 tsp
  • Garlic powder - 1 tsp
  • Hing - 2 pinch
  • Chaat masala - 1/2 tsp
  • Baking soda - 1/2 tsp
  • Water - 3/4 cup
  • Oil - 1 liter (to fry)

Dipping:

  • Chili powder - 1 tsp
  • Hot oil - 2 tbsp
  • Left out stuffing

Instructions:-

  • Firstly, take 6 long green chilies and make a slit at the center to stuff the ingredients. 
  • For stuffing, take 1 medium chopped onion to a mixing bowl, then add 2 tablespoons of chopped coriander leaves, 2 tablespoons of lemon juice, and salt. mix well and the stuffing is ready.
  • Fill the mirchi with stuffing one by one. 
  • Now we will make the batter for mirchi bajji frying. To a mixing bowl, add 2 cups of gram flour (besan), 3 tablespoons of rice powder, 2 tablespoons of corn flour, 1 teaspoon chili powder, 1 teaspoon garlic powder, 2 pinch hing, ½ teaspoon chaat masala, salt, and ½ teaspoon baking soda. Mix the ingredients well by adding ¾ cup of water.
  • Pour water gradually and mix to form a semi-flowy batter—perfect ribbon-like consistency.
  • Next, heat oil in a kadai on medium flame. Dip the mirchi in batter and make sure it is well coated with batter. Drop to the heated oil and keep the flame medium.
  • Fry until it turns golden and crispy. remove mirchi bajjis from the oil and place them on tissue paper to absorb excess oil. Repeat the same process for balance mirchis and the delicious mirchi bajjis are ready.
  • Finally, we will prepare and instance dipping chutney. To a mixing bowl add 1 teaspoon of chili powder, 2 tablespoons hot oil, and left out onion for stuffing. Mix well. Street-style dip for bajji is ready.
