To cook Rice ada
In a kadai, pour 4 cups of water and bring to a boil; add 200 gm rice ada and cook until soft and tender. Strain and set aside.Â
To make palada pradhaman
In a thick-bottomed vessel, pour 3 tbsp ghee; fry coconut bits until light golden; remove and set aside. Fry cashews and raisins in the same ghee, then set aside. Next, pour in the melted jaggery and bring to a simmer, then add the cooked ada and simmer on medium-low heat until it thickens. Next, add thin coconut milk and continue to simmer until it thickens. Once it thickens, add 1 tbsp ghee and cardamom powder for flavour. Next, pour in the thick coconut milk. After adding thick coconut milk, do not boil vigorously. Simmer gently on low heat for a few minutes.Finally, add in the fried coconut and nuts, combine, and switch off the flame. Serve hot by pouring over a banana leaf with banana and pappadam.
