Green Pepper Chicken Roast

A Fresh Twist on Classic Kerala Flavors

Kerala cuisine is loved for its generous use of spices, curry leaves, ginger, garlic, and shallots. This chicken roast brings all those wonderful flavors together while giving the traditional roast a delicious twist with fresh green peppercorns.

Unlike recipes that rely only on powdered pepper, the use of fresh green peppercorns gives this Pepper Chicken Roast a distinctive freshness and lively heat. The green pepper is blended with ginger, garlic, and shallots to create a flavorful marinade that coats every piece of chicken.

Why You’ll Love This Chicken Roast

There is so much to love about this Chicken Roast Recipe. The chicken is marinated with a fragrant green pepper mixture, allowing the flavors to penetrate the meat and create a delicious base.

The roasted spice blend adds another layer of flavor. Coriander seeds bring warmth and depth, black pepper adds a satisfying kick, fennel provides a subtle sweetness, and dried red chillies contribute a gentle smoky heat.

As the chicken cooks, these flavors come together beautifully. The result is tender chicken coated in a thick, aromatic masala that is incredibly tempting.

The Secret Is in the Freshly Roasted Spices

One of the highlights of this Kerala Style Chicken Roast is the freshly roasted spice mixture. Whole spices are gently dry-roasted until aromatic before being ground into a fine powder.

This simple step makes a noticeable difference. Roasting releases the natural oils from the spices and creates a deeper, richer aroma than using ready-made spice powders alone.

For the best flavor, roast the spices over medium heat and avoid letting them burn. Allowing them to cool before grinding also helps preserve their wonderful fragrance.

Green Peppercorns Make It Special

Fresh green peppercorns are the star ingredient in this Green Pepper Chicken Roast. They have a fresh, vibrant pepper flavor that works wonderfully with chicken.

When combined with ginger, garlic, and shallots, the green peppercorns create a beautifully aromatic paste. This gives the chicken its characteristic flavor even before the roasted spice blend is added.

If you enjoy pepper-based dishes, this Pepper Chicken Roast offers a delicious change from the usual black pepper chicken recipes.

Perfect for Everyday Meals

This is an Easy Chicken Recipe that works just as well for a regular family lunch or dinner as it does for a special weekend meal. The ingredients are simple, familiar, and easy to find, while the finished dish tastes rich and festive.

Serve it with steamed rice for a comforting Kerala-style meal. For a more indulgent combination, pair it with flaky Kerala parotta. It is equally delicious with chapathi, appam, dosa, or even simple ghee rice.

The thick masala also makes this chicken roast an excellent choice for serving at family gatherings and festive meals.

Tips for the Best Flavor

For the most delicious Chicken Roast Recipe, use fresh chicken and allow enough time for the marinade to coat the pieces properly. Fresh green peppercorns are especially important because they provide the signature flavor of this dish.

Use good-quality whole spices and roast them gently until fragrant. Fresh ginger, garlic, shallots, and curry leaves also make a big difference to the final taste.

Once the chicken is cooked, allow the masala to reduce until it becomes thick and clings to the chicken. This gives the roast its signature rich texture and concentrated flavor.
