Step 1. To a mixing bowl, add ¾ cup maida, salt, and ½ cup water. Knead to get a smooth dough and make small balls from the dough, set aside.
Step 2. Heat a frying pan and add 2 tablespoons of oil, 1 tablespoon of minced garlic, minced ginger, spring onion, ½ cup onion, ½ cup minced carrot, 1 cup cabbage, salt to taste, 1 teaspoon pepper powder and cook for 2 minutes. The stuffing is ready.

Next, we will prepare masala mix for momos, to a mixing bowl add 3 tablespoon curd, 1 tablespoon minced ginger, salt, 1 teaspoon turmeric powder, 1 & ½ teaspoon chili powder, ½ teaspoon garam masala, ½ teaspoon cumin powder, 1 teaspoon lemon juice, coriander leaves, and 2 tablespoon oil. Mix well and add 3-4 drops of food color (optional). Mix well and the masala mix is ready.
Step 6. Now coat momos with masala marinade and rest for another 10 minutes.
Step 7. To shallow fry momos, Heat a frying pan on medium flame and add 2 tablespoons of oil, Place all momos into the pan. Flip over and cook until dark golden patches appear. next place a small vessel inside the pan and put lighted charcoal into it. Pour 1 teaspoon of oil over the charcoal. Cover the pan and let it stay for 2 minutes. (this process gives a good smoky taste to the momos). Now transfer tandoori momos to the serving plate and serve with momos chutney. Thank you
