  • Soya Chunks – 2 cups
  • Hot water – 3 cups
  • Onion – 2 medium
  • Tomato – 1 
  • Ginger-Garlic-green chili paste – 2 tsp
  • Curry leaves
  • Coriander leaves
  • Salt
  • Turmeric powder – 1/2 tsp
  • Kashmiri chili powder – 3 tsp
  • Coriander powder – 2 tsp
  • Roasted fennel powder – 1 tsp
  • Garam Masala – 1/2 tsp
  • Oil – 4 tbsp
  • Water – 2 & 1/2 cups
  • Fennel seeds – 1/4 tsp
  • Pepper powder – 1/2 tsp
  • Garam Masala – 1/2 tsp

Instructions:-

  • To a mixing bowl add 2 cups of soya chunks, 3 cups of hot water, and salt. mix well and soak for 15 minutes.
  • After 15 minutes, strain water in soya chunks through a filter. Squeeze out excess water and transfer it to a pressure cooker.
  • To the pressure cooker add 1 medium chopped onion, 1 chopped tomato, 2 teaspoons ginger garlic green chili paste, curry leaves, coriander leaves, salt, ½ teaspoon turmeric powder,3 teaspoon Kashmiri chili powder, 2 tsp coriander powder, 1teaspoon roasted fennel powder, ½ teaspoon garam masala, and 1 tablespoon oil. Mix well using your hands and pour 2 & ½ cups of water.
  • Heat the pressure cooker on a medium flame and wait till 4 whistles, then switch off the flame and wait to release the pressure at full level. open the cooker and set aside well-cooked soya chunks gravy.
  •  Heat a Kadai on medium flame then add 3 tablespoons of oil, and ¼ teaspoon of fennel seeds and saute for a few seconds. Next, add 1 small onion and chopped, curry leaves. Cook for 2 minutes and add ½ teaspoon pepper powder and saute well.
  • Add cooked soya into the masala in Kadai and add salt if required. Cover and cook on a medium flame for 5 minutes.
  • After 5 minutes, open the lid and add coriander leaves, and ½ teaspoon garam masala. Mix well and switch off the flame after 1 minute. Transfer to a serving bowl.
  • Delicious soya chunks gravy (meat substitute) is ready. This is the best side dish for parotta and chapati. Enjoy.
