Step 1. Take a medium cauliflower and separate the florets from it. Next, add 2 cups of water to a bowl and 1 teaspoon of salt. Dissolve salt in water and soak florets in salt water for 10 minutes.
Step 2. After 10 minutes, wash and transfer the florets to a tray. Next, cut an onion into 2 pieces, then place it on the same tray. Now drizzle olive oil over florets and onion. Take 2 small garlic pods and cut the bottom side and put them on an aluminum foil. Sprinkle salt and drizzle olive oil over garlic then wrap it and place it on the same tray.
Step 3. Now transfer the tray to the oven and cook at 180 degrees Celsius for 35 minutes. After 35 minutes, take out the tray from the oven and squeeze out the garlic discard skin.
Step 4. Now transfer roasted ingredients to a grinding jar and add 3 tablespoons of cream, and 1 & ½ cups of water. Blend smoothly.
Step 5. Heat a kadai on medium flame and add 2 tablespoons of butter, and 10 cashew nuts. Roast for 1 minute then adds 2 green chilies and pureed veggies. Mix well and add salt, 1 teaspoon of pepper powder, and coriander leaves. Mix well and allow to simmer. Now add 1 pinch of oregano and cook for 2 minutes. Now the soup is ready to serve.
