You will need butter, all-purpose flour, baking powder, brown sugar, sugar glaze, and cornstarch slurry which can be made by mixing water with cornstarch. Step-by-step-instructions to prepare pineapple pie

Ingredients:-

  • Pineapple chunks – 1 cup
  • cold butter – 3/4 cup + 3 tbsp
  • All-purpose flour – 2 cups
  • baking powder – 1/4 tsp (optional)
  • salt – (add if butter is unsalted)
  • Ice water – 1/4 cup
  • brown sugar – 6 tbsp
  • Corn starch slurry  – corn starch (2 tsp) + water (1 tbsp)
  • Sugar Glaze – powdered sugar (3 tbsp) + Milk (1 tbsp)

Preparation:-

  • Add all-purpose flour, cold butter blocks, baking powder, and salt to a mixing bowl.
  • Mix by smashing the butter cubes with your fingers, the mixture turns moist and resembles bread crumbs.
  • Pour ¼ cup of ice water into batches. Continue to crumble and mix until the flour is completely moistened. (do not over-knead)
  • Once a dough ball is formed, cover, and refrigerate for 30 minutes.
  • Meanwhile, heat a pan and add pineapple chunks, brown sugar, and butter. Stir and cook until the pineapple turns soft.
  • Once the pineapple turns soft, pour the cornstarch slurry. Mix well and continue cooking for 2 more minutes.  removes from flame and sets aside.
  • After 30 minutes, remove the dough from the fridge, place it on a floured surface, and knead for 1 minute.
  • Flatten the dough using a rolling pin. Cut out small round discs using a cookie cutter or any other round-cutting tool. (The leftover trimmings can be re-rolled or refrigerated.) 
  • Place one teaspoon of pineapple filling at the center of each disc. then place another disc on top and seal the edges with a fork. Repeat the same with the remaining pie discs.
  • Poke holes in the dough with a fork, and egg wash the pie crust. The pies are ready to fry now.
  • Place the pies in an air fryer basket and air fry at 180 degrees Celsius for 16-20 minutes.
  • After 20 minutes, check the basket, the pies are perfectly baked and have turned brown and crispy. Pour sugar glaze (powdered sugar + milk) on top of each pie.
  • The flaky, delicious pineapple pies are ready for serving.
