Step 1. Take 4 medium chopped onions in a bowl and add 3 green chilies chopped, 2 tablespoons minced ginger, curry leaves, 4 tablespoons of all-purpose flour, and 4 tablespoon gram flour. Squeeze and mix, to release water from the onions. Allow resting for 15 minutes
Step 2. After 15 minutes, add 2 tablespoons of all-purpose flour, ½ teaspoon of fennel seeds, and 1 tablespoon of rice flour. Mix well.
Step 3. Make balls out of dough, place them on greased palm, and flatten and shape them.
Step 4. Heat enough oil in a kadai to deep fry onion vada then deep fry in medium flame remove from oil once it turns crispy and golden. Make more out of the dough and fry in batches.
