Ingredients:-

  1. Mutton –  1 kg
  2. Pepper powder – 1 tbsp
  3. Curry leaves 
  4. Garlic – 2 bulbs (for curry and marination )
  5. salt
  6. coriander leaves 
  7. Mutton Masala – 1 / 1/2 tsp
  8. water – 3 cups
  9. Coconut oil – 5 tbsp
  10. whole spice – 
  11. cinnamon – 3 inch
  12. Cloves – 4 
  13. Green Cardamom – 2 
  14. Bay leaf – 1 
  15. Onion – 2 medium
  16. Green chili – 6 
  17. tomato – 1 medium
  18. turmeric powder – 1 / 1/2 tsp
  19. Coriander powder – 1 / 1/2 tbsp
  20. chili powder – 1 /1/2 tbsp
  21. Garam masala – 2 tsp

Instructions:-

1. Marinate 1 kg of mutton pieces with Pepper powder, curry leaves, coriander leaves, crushed garlic, coconut oil, salt, and Mutton Masala (store-bought).

Allow to rest for at least 1 hr, overnight marination would be best for this recipe.

2. After the Marination transfer mutton to a pressure cooker, add 3 cups of water stir well, and pressure cook until tender. (2 or 3 whistles). After 3 whistles mutton has turned tender 

3. To a deep bottom pan add 4 tbsp of coconut oil, and whole spices (cinnamon, cloves, cardamom, bay leaf).

4. Add 2 medium-sized onions, Crushed Garlic, Green chili, and curry leaves, and saute until the onions turn golden.

5. Once onions turn golden add seasoning (turmeric, coriander and chili powder  ). saute until the raw smell of spices goes off.

6. Add 1 medium tomato, and cook, until it turns soft

7. Next add the cooked mutton pieces along with the stock, and allow to simmer for 10 to 15 mins until the gravy thickens.

8. At the final stage of cooking add 2 tsp of garam masala 

9. Finally garnish with coriander leaves
