Ingredients:-
1. Coriander Leaves – Few
2. Green Chili – 3
3. Spring Onion
4. Curd – 2 Tbsp
5. Cashew nuts – 5 to 6
6. Oil – 7 Tbsp
7. Capsicum – 1
8. Button Mushroom – 250 gm
9. Onion Paste – 2 medium
10. Ginger Garlic Paste – 2 Tsp
11. Tomato Puree – 2
12. Salt as required
13. Water – 1 cup
14. Coriander Powder – 1 Tsp
15. Fennel Seeds Powdered – 1/2 Tsp
16. Pepper Powder – 1 Tsp
17. Garam Masala – 1/2 Tsp
Instructions:-
- To a grinding jar add a bunch of coriander leaves, 3 green chilies, and spring onion. grind well till smooth paste. Transfer to a bowl and set aside.
- To a grinding jar add 2 tablespoons of curd, and 5-6 cashew nuts, blend well to smooth paste and set aside.
- Heat a Kadai on medium flame then add 2 tablespoons of oil, and 1 capsicum chopped. Saute well in high flame for 2 minutes after that remove from Kadai and set aside.
- Now add 2 tablespoons of oil to the same heated Kadai and add chopped button mushroom 250 gram. Saute in medium flame for 5 minutes. Transfer mushrooms to a plate and set aside.
- Add 3 tablespoons of oil to the same heated Kadai and add 2 medium onion pastes then cook for 5 minutes. Now add 2 teaspoons of ginger garlic paste and cook for 2 minutes. next, add green masala (which is made in 1st step), 2 tomato puree, salt, cover, and cook for 5 minutes
- After 5 minutes, open the lid and add 1 cup water, mushroom, and capsicum. Stir well, cover, and cook for 2 minutes.
- After 2 minutes, add 1 teaspoon of coriander powder, ½ teaspoon of fennel seeds powder, 1 teaspoon of pepper powder, and ½ teaspoon of garam masala. Stir well, cover, and cook for 2 minutes.
- After 2 minutes, add curd and cashew paste. Mix well and pour water if required. Allow simmering.
- Garnish with coriander leaves and spring onion. The delicious mushroom masala is ready, now transfer it to a serving plate and enjoy it with rice or roti. Thank you.
