Step 1. To a mixing bowl add 1 cup maida, ¼ cup wheat flour, 2 tablespoon semolina, salt, ½ teaspoon crushed chili, 1 teaspoon garlic powder, ½ teaspoon mixed herbs, and ½ cup mozzarella cheese. Mix well and add 1 cup water gradually. Again mix well and knead to form a smooth dough. drizzle 1 tablespoon of oil over the dough and knead for a few seconds. Allow resting for 15 minutes.
Step 2. After 15 minutes add chopped coriander leaves and knead for 1 minute. Make small balls out of dough. Spread it to puri sized disc.
Step 3. Heat enough oil in a kadai and deep fry puri in hot oil. Fry until golden patches appear. Remove from the kadai and place them in a serving plate. Make more puris out of the dough using the same process. Masala cheese puri is ready.
Step 1. Heat a frying pan on medium flame and add 2 tablespoons of oil, 1 teaspoon of minced ginger, and 1 tablespoon of garlic, saute for a few seconds and add 2 green chilies, and 1 chopped onion, cook until golden color.
Step 2. Next, add 1 medium chopped tomato. Cook until tomatoes turn mushy. Now add ½ teaspoon turmeric powder, 1 teaspoon chili powder, and ½ teaspoon garam masala. saute until the raw smell goes off.
Step 3. Next, add 1 cup of frozen green peas, and salt. Mix well. Now add 1 & ½ cups of water. Cover and cook for 5 minutes. After 5 minutes open cover and garnish with coriander leaves. Matar masala is ready to serve.
