  • Rum - 1/2 cup
  • Maida /cake flour - 2 cups
  • Eggs - 4 
  • powdered sugar - 1 and 1/4 cups
  • sugar - 3/4 cup
  • water - 1 cup
  • Vegetable oil - 1 cup
  • Vanilla essence - 1 and 1/2 tsp
  • baking powder - 1 and 1/2 tsp
  • baking soda - 3/4 tsp
  • Cinnamon powder - 1 tsp
  • Nutmeg powder - 1 tsp
  • Ginger powder - 1/2 tsp
  • Cocoa powder - 1 tbsp

Instructions:-

  • Soak the dry nuts in rum 2 days prior to baking. Put all dry nuts in a glass jar like chopped cashew nuts, black raisins, golden raisins, cherries, Tutti frutti, dry cranberries, dates, almonds, and pistachio chopped, ½ cup rum, 
  • Soak the nuts in rum and allow them to stay for 2 days or a week.
  • After 2 days, heat a frying pan on low flame and caramelize ¾ cup of sugar. Keep the flame low and allow the sugar to slowly melt and started to change its color. At this stage add 1 cup of hot water take care as it can splash.
  • Allow staying for another 10 minutes. Once done allow cooling completely. 
  • Now let’s move on to the batter preparation, for that crack 4 eggs into a mixing bowl and beat eggs until frothy. Next, add 1 & ½ cups of powdered sugar in 3 batches. continue to beat in every stage.
  • Then add 1 cup vegetable oil to the batter, add 1 & ½ teaspoon vanilla essence, and ½ cup caramelized sugar. beat to combine well.
  • Next, sift dry ingredients through a strainer into the batter. 2 cups cake flour, 1 tablespoon cocoa powder, 1 and 12 teaspoons baking powder, 34 teaspoons baking soda, 1 teaspoon cinnamon powder, 1 teaspoon nutmeg powder, and 12 teaspoons ginger powder, sifted together, and whisked until batter is ribbon consistency.
  • Now add in the rum-soaked dry nuts. add only the nuts and mix well. save the liquid for final brushing. mix well and the batter is ready for baking.
  • Pour batter into an 8-inch pan greased and lined with butter paper. Tap to release the bubbles. Decorate with nuts and raisins.
  • Then bake it in a kadai for 1 hour or until done. 
  • After 1 hour and 10 minutes, open the lid and insert a skewer, it has come out clean. Brush the remaining rum along the top and sides. This will help to store cakes for 1 long time.
  • Cut the cake into a small piece and place them on a serving plate., the cake has turned soft and moist enjoy and thank you.
