Tomato Chutney: The Perfect Companion

Tomato chutney is a classic accompaniment in Indian cuisine, often served with dosas, idlis, and other South Indian dishes. In this recipe, the chutney is packed with the flavors of garlic, shallots, and various spices. The addition of tamarind gives it a nice balance of tanginess, making it the perfect dip for your instant dosa. The chutney not only enhances the dosa but also adds an extra layer of richness that brings the entire dish together.

For those looking to add a healthy twist, the chutney is made with minimal oil and features high-protein ingredients like black urad dal, which provide essential nutrients while still offering a deep, flavorful base. The spices used in the chutney—mustard seeds, cumin, and dry red chilies—are all staples in Indian cooking, known for their ability to stimulate digestion and enhance the overall taste profile of the dish. The combination of these ingredients ensures that each bite of the Instant Dosa with Chutney is packed with layers of flavor.

Gluten-Free Dosa: Healthier Alternative

The gluten-free aspect of this dosa recipe makes it a great alternative for individuals who are sensitive to gluten or those following a gluten-free diet. Instead of the traditional rice and urad dal batter, which requires fermentation, this recipe uses a combination of poha, rice flour, and oats to create the batter. Oats, being rich in fiber, contribute to the dosa's crunchiness and provide a more filling meal. This gluten-free dosa is a fantastic option for anyone looking to enjoy the taste of dosas without the concerns of gluten.

Not only is this dosa recipe gluten-free, but it’s also light on the stomach and easy to digest. The absence of wheat flour makes it a suitable choice for those with wheat allergies, celiac disease, or anyone wanting to explore a healthier alternative. The addition of curd in the batter also provides probiotics, which are beneficial for gut health, while the quick preparation ensures that you can have a fresh, hot meal in no time.

  • 0.25 cup Rice Flour
  • 0.25 cup Curd
  • 0.5 tsp Salt
  • 0.5 cup Water
  • 1 tsp Eno
Preparation
  1. Tomato Chutney:
    1. Temper the spices: Heat 2 tbsp oil in a pan. Once hot, add mustard seeds and let them splutter. Then, add cumin seeds, chopped shallots, and garlic. Sauté until the shallots are lightly golden.
    2. Add dals and spices: Toss in dry red chilies, curry leaves, and black urad dal. Stir the mixture for a minute to blend the flavors.
    3. Cook tomatoes: Add chopped tomatoes and salt. Cook the tomatoes until they soften and turn mushy, which may take about 5-7 minutes.
    4. Grind the chutney: Turn off the flame and let the mixture cool. Once cooled, transfer it to a grinding jar. Add tamarind and a quarter cup of water, and blend to a smooth paste.
    5. Adjust the chutney consistency: Transfer the ground paste to a bowl. Add half a cup of water to the grinding jar, swirl it around to collect any leftover paste, and add this to the chutney. Stir well and adjust the consistency with additional water if needed.
    6. Prepare the tadka: In a separate pan, heat 2 tbsp oil. Add mustard seeds, curry leaves, and dry red chilies. Let the mustard seeds splutter, and then pour this tadka over the chutney. Mix everything thoroughly, and the chutney is ready to serve.
  2. Instant Dosa:
    1. Soak poha: In a bowl, add poha (flattened rice) and pour enough water to soak it. Let it sit for about 10 minutes.
    2. Grind the batter: In a grinding jar, combine oats, rice flour, curd, salt, and water. Grind until the mixture becomes smooth.
    3. Mash poha: After 10 minutes, mash the soaked poha and add the ground batter to it. Mix everything well, adjusting the consistency with water if needed.
    4. Activate the Eno: Add 1 tsp of Eno to the batter, followed by 1 tbsp of water. Stir well to activate the Eno, and your batter is ready to cook.
    5. Cook the dosa: Heat a tawa or non-stick pan. Pour a ladle of batter onto the tawa and spread it into a circle. Cover and cook for 2 minutes, until the top layer is cooked and no wet batter remains. For a crispier dosa, you can flip it and cook until the top layer turns slightly golden.
    6. Serve: Once the dosa is cooked to your liking, remove it from the tawa and serve hot with the prepared tomato chutney.
