This is a quick lunch box recipe that doesn't require any additional side dishes or gravy. Step-by-step Instructions to make garlic rice

Ingredients:-

  • Basmati Rice - 200 gm washed and strained 
  • water - 4 cups to cook rice
  • salt
  • Oil /butter /ghee - 3 tbsp
  • Garlic chopped - 1/4 cup
  • Mustard seeds - 1/2 tsp
  • Urid daal - 1/2 tsp
  • Chana daal - 1 tsp
  • Shallots - 1/4 cup
  • green chili - 2 
  • Dry red chili - 2
  • curry leaves 
  • coriander leaves
  • pepper powder - 1 tsp

Preparation:-

1. Cook rice by boiling 4 cups of water, adding enough salt to the water, and then add the soaked basmati rice. Cook rice in boiling water for 5 minutes; once cooked, wash and strain; set aside.

2. To a heavy bottom pan, add 3 tbsp oil, add the chopped garlic, and fry until it turns golden. Remove and set aside.

3. Add half a teaspoon of mustard seeds to the remaining oil; when it begins to crackle, add half a teaspoon of urad daal and one teaspoon of Chana daal.

4. Add chopped shallots, green chili, dry red chili, and curry leaves. Cook until the shallots turn color. then add half of the fried garlic and save the remaining half for garnish. Add cooked rice; check for salt at this stage and add if necessary; then add 1 tsp of pepper powder.

5. Cook for 2 minutes on low heat, stirring constantly; garnish with remaining fried garlic and coriander leaves. Delicious garlic rice is ready to serve. You can have it as such or enjoy it with Raitha and serve it with papad, chips, or potato fries.
