Many people enjoy this egg vermicelli dish for breakfast because it's filling and healthy at the same time.  For the preparation, you will need to cook rice vermicelli and separately cook eggs (scrambled eggs) and some vegetables including carrots, green peas, corn, and beans along with the onion. Finally add salt, garam masala, pepper powder, soya sauce, and tomato ketchup and mix with cooked rice vermicelli, scrambled eggs, and garnish with coriander leaves. Step-by-step-instructions to prepare egg vermicelli

Ingredients:-

  • Rice Vermicelli - 200 gm
  • Water - 4 cups
  • salt
  • Oil - 5 tbsp
  • Eggs - 3
  • Onion - 1
  • Carrot - 1/4 cup
  • Frozen green peas - 1/4 cup
  • Frozen Corn - 3 tbsp
  • Beans - 3 tbsp
  • Pepper powder - 1 tbsp
  • Garam Masala - 1 tsp
  • Soy Sauce - 2 tbsp
  • Tomato Ketchup - 2 tbsp
  • Coriander Leaves

Preparation:-

1. Pour 4 cups of water into a vessel, and add enough salt and one tablespoon of oil. Bring to boil 

2. Add 200 grams of rice vermicelli to boiling water.  The cooking time of rice vermicelli is too less hence allow it to stay in water for only 1 minute.

3. After 1 minute of cooking strain the vermicelli and wash with cold water to avoid overcooking.

4. Next, let's make scrambled eggs for that add oil to a heated pan. crack 3 eggs into the pan keep in medium flame and allow eggs to stay in the oil for a few seconds Gently stir using a spatula and season with salt and pepper when big soft lumps shift from stirring to folding the lumps over on themselves. cook until no liquid egg is remaining. immediately transfer the eggs to a bowl.

5. To the same pan add 2 tbsp of oil, add chopped onions and vegetables 

6. Add salt and cook the veggies on high flame for 3 to 4 mins, when vegetables turn tender add seasoning.

7. Add pepper powder and Garam masala 

8. Add soy sauce and Tomato ketchup 

9. Stir and cook for a few seconds then add cooked vermicelli. Mix well 

10. Add scrambled eggs and garnish with coriander leaves. Serve hot
