Ingredients

  • Quail Eggs – 30
  • Coriander seeds – 1 tbsp
  • Cumin – 1 tsp
  • Fennel seeds – 1 tsp
  • PepperCorns – 1 tsp
  • Fenugreek seeds – 1/4 tsp
  • Bay Leaf – 1 
  • Kashmiri Red chili – 7-8
  • Tamarind – small piece
  • Jaggery – small piece
  • Water – 1/4 cup
  • Ghee – 1/4 cup
  • Onions – 2 medium
  • Curry leaves
  • Green chili – 2 
  • Ginger Garlic paste – 2 tsp
  • Salt
  • Coriander Leaves
  • Garam Masala – 1/2 tsp
  • Water – 1/4 cup
Instructions
  • Firstly, heat a frying pan on a medium flame and add 1 tablespoon of coriander seeds, 1 teaspoon of cumin, 1 teaspoon of fennel seeds, 1 teaspoon of peppercorns, ¼ teaspoon fenugreek seeds, 1 bay leaf. Saute for 1 minute in medium flame.
  • Add 7-8 Kashmiri red chili into the same fry pan. Saute for 2 minutes on medium flame. now switch off the flame and allow it to cool.
  • Transfer the sauteed ingredients into the grinding jar and add a small piece of tamarind, a small piece of jaggery, and ¼ cup of water. Grind to smooth paste.
  • Nest, heat a frying pan, add ¼ cup ghee, and 28-30 boiled quail eggs. Fry for 2 minutes on medium flame. remove and set aside.
  • To the same frying pan add 2 medium chopped onions, curry leaves, and 2 green chilies. cook until golden color. Next, add 2 teaspoons of ginger garlic paste.
  • Once the onions turn golden add the ground masala to the pan. Allow to simmer and add salt. Saute well and cook on a medium flame for 10 minutes.
  • Now spread some coriander leaves and add ½ teaspoon garam masala, mix well. Add ¼ cup water and cook for 2 more minutes. Then add boiled fried quail eggs to the masala. mix well and garnish with coriander leaves.
  • The delicious quail eggs ghee roast is ready to serve. Transfer the same to the serving dish and enjoy with appam or roti., thank you.
