Healthy Mexican Rice: Nutritious and Delicious

  1. Add 2 chopped tomatoes to the grinding jar, Blend smooth, and set aside.
  2. Wash and Soak 1 cup of Basmati Rice for 30 minutes.
  3. To a heated pan add oil and butter, add chopped garlic, and saute for a few seconds then add in onion and cook until onions turn Golden.
  4. Once onions turn golden pour tomato puree and one tablespoon of Ketchup, crushed chili, Pepper powder, Oregano, Cumin Powder, and Coriander Powder simmer and cook for 2 minutes.
  5. Add salt, and veggies stir, and cook for 2 minutes. After 2 minutes Pour Water(use the same measuring cup used to measure rice) and 1 cube Veg stock Mix well and add soaked basmati rice.
  6. Cover and Cook in Low flame until the water is completely absorbed and the rice turns soft.
  7. Once the rice is well cooked add Kidney beans and garnish with coriander leaves. Mix well and Mexican rice is ready to serve.
