For Coriander Chutney
  • Coconut pieces - ½ cup
  • Ginger - 1-inch piece
  • Green chili - 3
  • Roasted chana dal - 1 tbsp
  • Coriander Leaves - a handful
  • Tamarind -  1 small piece
  • Water - ½ cup
  • Salt to taste
  • Oil - 1 tbsp
  • Mustard seeds - ½ tsp
  • Dry red chili - 1
For Cucumber Dosa
  • Rava - 1 cup
  • Buttermilk - ½ cup
  • Cucumber - 1
  • Kashmiri red chilies - 5
  • Ginger - 1 big piece
  • Garlic Cloves - 4
  • Cumin Seeds - 1 tsp
  • Coconut pieces -  2 tbsp
  • Salt to taste

Instructions:-

For Coriander Chutney
  • Step: 1. To a grinding jar add 1 cup of coconut pieces, 1 piece of ginger, 3 green chilies, 1 tablespoon of roasted chana dal, a handful of coriander leaves, 1 small piece of tamarind, and add ½ cup of water. Grind smooth. 
  • Step: 2. Transfer the ground mixture to a bowl and add salt as required. Mix well. Next, heat a small kadai on medium flame and add 1 tablespoon oil, ½ teaspoon mustard seeds, and 1 dry red chili after tempering pour over the chutney. Mix well and the coriander chutney is ready.
For Cucumber Dosa
  • Step: 1. To a mixing bowl add 1 cup of rava/semolina and ½ cup buttermilk. Mix and soak rava for 10 minutes. 
  • Step: 2. Next, peel 1 cucumber and slice it into small pieces. Now transfer to a grinding jar and add 5 Kashmiri red chilies, 1 big piece of ginger, 4 garlic cloves, 1 teaspoon of cumin seeds, 2 tablespoons of coconut pieces, salt to taste, and soaked rava. Blend smoothly and transfer the batter to a bowl.
  • Step: 3. Heat a tawa on medium flame, then pour 2 ladles full of batter and spread evenly. Drizzle oil on the edges of dosa. Once the dosa turns crispy remove it from the pan and place it into a serving plate.  repeat the process for the remaining batter and make more dosas. 
  • Now the cucumber dosas are ready, enjoy them with previously made coriander chutney as a delicious dip. Thank you.
