Ingredients
    For Baingan Marination
  • 2 Number Brinjal
  • 0.5 tsp Turmeric Powder
  • 2 tsp Kashmiri Chili Powder
  • 0.5 tsp salt
  • 0.5 tsp pepper powder
  • 1 tsp ginger garlic paste
  • 2 tbsp water
  • For Frying Baingan
  • 1 sprig of curry leaves
  • 3 tbsp oil
  • For Beaten Curd
  • 500 ml Curd
  • 0.5 tsp salt
  • 0.5 tsp Cumin powder (Roasted)
  • For Tadka
  • 2 tbsp Oil
  • 0.5 tsp cumin seeds
  • 6 curry leaves
  • 1 number dry red chili
  • 3 number shallots chopped
  • 0.5 tsp chili powder
Preparation
  1. Cut 2 medium-sized Brinjal into round coins, 1-inch thickness.
  2. Prepare Masala to marinate Brinjal, Mix Turmeric, Chili powder, salt, Pepper powder, ginger garlic paste, and 2 tbsp of water. Marinate the coins.
  3. To fry the coins pour oil in a pan, sprinkle some curry leaves, and shallow fry the brinjal coins until they turn soft. Once soft remove from pan and set aside.
  4. To a bowl add 500 ml curd, Add salt and cumin, Beat or whisk until smooth.
  5. Now add the fried Brinjan to the beaten curd. Mix and set aside
  6. Let’s make tadka/Seasoning, In a tadka pan add oil, cumin seeds, curry leaves, Dry red chili, chopped shallots, and fry until the onion turns golden. Switch off the flame add chili powder and mix.
  7. Pour tadka over curd. Stir and Dahi baingan is ready to serve.
  8. Serve with Rice or Roti or Paratha.
