Preparation
- Cut 2 medium-sized Brinjal into round coins, 1-inch thickness.
- Prepare Masala to marinate Brinjal, Mix Turmeric, Chili powder, salt, Pepper powder, ginger garlic paste, and 2 tbsp of water. Marinate the coins.
- To fry the coins pour oil in a pan, sprinkle some curry leaves, and shallow fry the brinjal coins until they turn soft. Once soft remove from pan and set aside.
- To a bowl add 500 ml curd, Add salt and cumin, Beat or whisk until smooth.
- Now add the fried Brinjan to the beaten curd. Mix and set aside
- Let’s make tadka/Seasoning, In a tadka pan add oil, cumin seeds, curry leaves, Dry red chili, chopped shallots, and fry until the onion turns golden. Switch off the flame add chili powder and mix.
- Pour tadka over curd. Stir and Dahi baingan is ready to serve.
- Serve with Rice or Roti or Paratha.
