Ingredients
    For Cooking Rice
  • 1 cup Basmati Rice
  • 1.5 cup Water
  • 25 numbers Butterfly Pea flower
  • 2 blocks Veg Stock
  • For Ghee rice
  • 2 tbsp Ghee
  • 0.5 tsp Cumin
  • 4 numbers Cloves
  • 2 numbers Cinnamon
  • 2 numbers Cardamom
  • 1 number Star Anise
  • 1 number Bay Leaf
  • 0.25 tsp Pepper Corns
  • 1 tbsp Garlic (Minced)
  • 0.5 cup Onion (Chopped)
  • 2 tbsp Cashew Nuts
  • 0.25 cup Coriander Leaves (Chopped)
  • For Raita
  • 2 cup Curd
  • 0.25 cup carrot (Grated)
  • 0.25 cup cabbage (chopped)
  • salt (as per taste)
  • 0.25 tsp Cumin Powder (Roasted)
Preparation
  1. Wash and strain 1 cup of Basmati Rice, Soak for 30 minutes.
  2. In a Pan Boil 1 & ½ cup of water ( Use same cup used to measure Rice)
  3. Add the dried butterfly pea flowers (or flower powder or fresh flowers ) to the boiling water and let it steep for 5-10 minutes until the water turns a deep blue color.
  4. Once the color is released remove the flowers and add soaked rice, put salt or veg stock ( 2 blocks) for flavor.
  5. Cover and cook in low to medium flame until the rice is cooked.
  6. Once rice is cooked switch off flame and keep it covered for 5 to 10 minutes.
  7. To a Pan add 2 tbsp Ghee, Add the whole spices mentioned in the ingredients list, saute for 1 minute in medium flame.
  8. Next add minced garlic, cook until the garlic turns light golden, then add chopped onion stir and cook for 2 minutes, once it turns light golden add cashew nuts.
  9. Next add the cooked rice, stir well and garnish with coriander leaves. Allow to stay for 1 more minute and switch off flame.
  10. Let’s make a simple raita to serve with ghee rice.
  11. Take 2 cups of curd in a bowl, add carrot and cabbage ( use veggies of your choice) add salt and cumin powder. Mix well and the raita is ready.
  12. Serve ghee rice with raita. Enjoy the beautiful and aromatic butterfly pea ghee rice!
