Mishti Doi is a traditional Bengali Dessert made with Curd, Sugar /Jaggery, and Milk. “Mishti” means sweet, and “Doi” means Yogurt. Mishti Doi is prepared by boiling milk until it reduces to half its volume then sweetened with sugar or Jaggery. The mixture is then allowed to cool. after cooling yogurt is slowly combined to initiate fermentation. The Mixture is then filled in earthenware pots and allowed to set Overnight. Setting in an earthenware pot gives an earthy flavor to the Yogurt and also helps to remove excess moisture from yogurt which results in thick creamy Doi. Mishti Doi is often served chilled, garnished with nuts and saffron.

Taste of Bengal: Easy Mishti Doi Recipe

Ingredients:-

  • Curd: 1 cup
  • Sugar: 1 cup
  • Milk: 3 cups

Preparation:-

  • Firstly, Pour 1 cup of curd over a strainer to drain off water and allow it to stay for 30 minutes. 
  • Add 1 cup of sugar to a Pan, caramelize the sugar until it turns golden brown, and keep the flame low.
  • Once sugar gets caramelized, pour 3 cups of milk, Pour in batches and mix without lumps.
  • Simmer and cook the mixture in medium flame until it reduces to half its quantity. Stir occasionally by scraping the edges of the pan.
  • After 10-15 minutes, Milk reduces to half its quantity. Switch off the flame.
  • Check on curd, once the water is drained, transfer it to a bowl and beat or whisk until smooth.
  • Gradually pour the mixture into beaten curd, and whisk until it’s well combined. The mixture turns thick.
  • Now fill the Sweet yogurt mixture in earthenware pots. Cover it with cling film. 
  • Place the pots in a deep bottom Vessel and cover with thick cloth.
  • Allow to stay undisturbed for 12 hrs. 
  • After 12 hrs, Thick and Creamy Mishti Doi is ready. Serve it Chilled.
